What is Mochiko?

Mochikoもち粉 is a type of glutinous rice flour (or sweet rice flour) made from mochigome which is glutinous short-grain Japanese rice. It is sometimes called Gyuhiko 求肥粉 or Daifukuko 大福粉. Known for its sticky and chewy texture, mochiko is primarily used to make Japanese pastry and sweets.


Is this chicken gluten free?

Yes, however we do work with gluten-based products in our kitchen. Although we do not use gluten in the preparation of the chicken itself, we do prefer to top the chicken with gochujang mayo (our gochujang contains gluten, malted wheat flour) and we will only ever serve King’s Hawaiian Sweet Rolls for our sandwiches (contains gluten & dairy). If you want the chicken to be gluten free, just remember to click the “no gochujang mayo” button when ordering and you will be Gucci!


How is this chicken better than other fried chicken?

Not better, just different. We don’t take ourselves too seriously, however we take this chicken game way too serious. We want to get 1% better every day, we want to make amazing happen for you at mealtime.

I want a Chicken Breast or Chicken Wings but I don’t see any options for that?

We only sell thighs, we will only ever sell thighs. We have been playing with a “popcorn chicken” idea that may use white meat chicken breasts. It is not perfect yet, so check in later.

Why put egg & potato into a Macaroni Salad?

That is what Mac Salad is in Hawaii. If you don’t like egg and or potato in your Mac Salad: #1 you trippin’, #2 don’t know until you try it!

Why is your Hot Chili Sauce so goooood?

The secret ingredient is gluten-free fish sauce. I know, it sounds weird…Not weird, delicious!

What is Kewpie mayonnaise?

Kewpie is a little different than American mayo, because it's made with only egg yolks—not whole eggs—and with rice or apple vinegar and no added salt or sugar. It's bottled in a slim red-and-clear container, with an emblematic baby for its logo. But the real secret to Kewpie's cult-following is a healthy dose of MSG (flavor enhancer).

What is Ube?

Short answer, our fresh organic ube is similiar to a Okinawan purple sweet potato but much more rare.

What is Furikake?

It is a seasoning, Our furikake is made with toasted sesame seeds, nori, salt & sugar.

What are Soy Crackers?

We call the soy crackers but a better name would be soy rice crackers or sakura arare. Sakura arare is a type of bite-sized Japanese cracker made from glutinous rice and flavored with soy sauce. Premium Mixed Arare Rice Crackers are crunchy and just a little salty. They're the perfect addition to popcorn or a great alternative to potato chips. The mixed variety arare comes in an assortment of shapes. We proudly serve Tomoe Brand crackers.

What is Gochujang mayo?

Gochujang or red chili paste is a savory, sweet, and spicy fermented condiment, popular in Korean cooking & we blend it with American mayo.

What is Miso?

Sweet fermented soybean puree.

What is Li Hing Mui?

Salted sweet plum.
